Bison Meatloaf

Equipment

    Ingredients

    • 1 lb ground bison meat

    • 1/4 cup breadcrumbs

    • 1/2 beef broth

    • 1 egg - beaten

    • 1/4 cup diced onion

    • 1/4 cup Parmesan cheese - shredded

    • 1 Tbs tomato paste

    • 3 tsp Worcestershire sauce

    • 1 tsp salt

    • 1/4 tsp paprika

    • 1/4 tsp black pepper

    • 1/4 tsp onion salt

    • 1/3 cup ketchup

    • 2 Tbs balsamic vinegar

    • 1 Tbs brown sugar

    Instructions

    1) Preheat oven to 350°
    2) In a large bowl, combine ground bison, bread crumbs, beef broth, egg, onion, parmesan, tomato paste, Worcestershire, and seasonings. Work it all together until all of the ingredients are well blended.
    3) In a separate small bowl, combine ketchup, balsamic vinegar, and brown sugar to make the glaze.
    4) Brush 2 Tbs of the glaze mixture in the bottom of a bread pan, and then set the meat mixture on top and press it in to form a loaf that is 2"-3" thick. Then spread the remaining glaze mixture on top of the meatloaf.
    5) Bake the meatloaf in the oven for 40 minutes or until the internal temperature reaches 160°.
    6) Sprinkle with shredded parmesan cheese and serve.

    Notes

    Bison meat is more lean and more dense than beef, so it takes less time and less heat to prepare. It should be cooked to reach an internal temperature between 145°F (rare) – 160°F (well done). Because it is so lean, bison meat will cook 1/3 times faster than beef. It’s a great substitute for all of your favorite beef recipes!
