Reverse Seared Bison Tomahawk Steak

Equipment

Ingredients

  • 1 Bison Tomahawk

  • 2 Tbsp butter

  • 2 cloves of minced garlic

  • Course salt

  • Cracked pepper

Instructions

1) Preheat oven to 275°
2) Season the steak liberally with salt and pepper and place on a rack set on a baking sheet.
3) Bake in the oven for about 45 min or until the internal temperature reaches 128°. Remove from oven.
4) Meanwhile, heat a cast iron skillet over high heat. Add butter, garlic, and steak to the skillet. Continuously baste for 1 minute, then flip and repeat on the other side.
5) Remove steak from skillet and let it rest for about 5 minutes before serving.

Notes

Bison meat is more lean and more dense than beef, so it takes less time and less heat to prepare. It should be cooked to reach an internal temperature between 145°F (rare) – 160°F (well done). Because it is so lean, bison meat will cook 1/3 times faster than beef. It’s a great substitute for all of your favorite beef recipes!
